गाजर हलवा

Gajar Halwa Recipe



Gajar halwa is a traditional Indian dessert made from grated carrots, milk, sugar, ghee, and spices. Here is a simple recipe for making gajar halwa:

Ingredients:

  • 1 kg of grated carrots
  • 1 liter of whole milk
  • 400g of sugar
  • 200g of ghee (clarified butter)
  • 8-10 green cardamom pods, crushed
  • 2 tablespoons of chopped almonds
  • 2 tablespoons of raisins
  • 1 tablespoon of chopped pistachios (optional)

Instructions:

  1. Heat ghee in a large, heavy-bottomed pan over medium heat.
  2. Add grated carrots and cook, stirring frequently, until they soften and turn a deep orange color, about 20-25 minutes.
  3. Gradually add milk to the pan, stirring continuously, and cook until the milk has been absorbed and the carrots are soft, about 30-40 minutes.
  4. Add sugar to the pan and stir until it has dissolved.
  5. Add crushed cardamom and cook for another 5-7 minutes, stirring continuously, until the mixture thickens and the ghee begins to separate from the edges of the pan.
  6. Stir in chopped almonds and raisins. Cook for another 2-3 minutes.
  7. Turn off the heat and transfer the gajar halwa to a serving dish.
  8. Sprinkle with chopped pistachios (if using) and serve hot or warm. Enjoy!
