Gajar halwa is a traditional Indian dessert made from grated carrots, milk, sugar, ghee, and spices. Here is a simple recipe for making gajar halwa:
Ingredients:
- 1 kg of grated carrots
- 1 liter of whole milk
- 400g of sugar
- 200g of ghee (clarified butter)
- 8-10 green cardamom pods, crushed
- 2 tablespoons of chopped almonds
- 2 tablespoons of raisins
- 1 tablespoon of chopped pistachios (optional)
Instructions:
- Heat ghee in a large, heavy-bottomed pan over medium heat.
- Add grated carrots and cook, stirring frequently, until they soften and turn a deep orange color, about 20-25 minutes.
- Gradually add milk to the pan, stirring continuously, and cook until the milk has been absorbed and the carrots are soft, about 30-40 minutes.
- Add sugar to the pan and stir until it has dissolved.
- Add crushed cardamom and cook for another 5-7 minutes, stirring continuously, until the mixture thickens and the ghee begins to separate from the edges of the pan.
- Stir in chopped almonds and raisins. Cook for another 2-3 minutes.
- Turn off the heat and transfer the gajar halwa to a serving dish.
- Sprinkle with chopped pistachios (if using) and serve hot or warm. Enjoy!
