Ingredients:
- Chicken: 500 grams (cut into bite-sized pieces)
- Onion: 1 large (sliced)
- Carrots: 2 medium (peeled and cut into chunks)
- Potatoes: 2 medium (peeled and cut into chunks)
- Cooking Oil: 2 tablespoons
- Garlic: 2 cloves (minced)
- Ginger: 1-inch piece (minced)
- Chicken Broth or Water: 2 cups
- Japanese Curry Roux: 1 package (usually contains a mix of spices and
thickening agents; brands like S&B or Golden Curry are popular)
- Soy Sauce: 1 tablespoon
- Apple: 1 small (peeled and grated)
- Salt: to taste
- Black Pepper: to taste
Instructions:
- Prepare Ingredients:
- Cut the chicken into
bite-sized pieces.
- Slice the onion, and cut the
carrots and potatoes into chunks.
- Mince the garlic and ginger.
- Cook the Chicken:
- Heat the cooking oil in a
large pot over medium heat.
- Add the chicken pieces and
cook until browned on all sides. Remove and set aside.
- Sauté Vegetables:
- In the same pot, add the
sliced onions and cook until they become translucent and slightly
caramelized.
- Add the minced garlic and
ginger, and cook for another minute.
- Combine Ingredients:
- Add the carrots and potatoes
to the pot and stir well.
- Return the chicken to the pot

- Add Curry Roux:
- Break the curry roux into
pieces and add it to the pot.
- Stir until the roux is fully
dissolved and the curry thickens. This should take about 5-10 minutes.
- Flavor Adjustment:
- Add the grated apple for a
touch of sweetness.
- Season with soy sauce, salt,
and black pepper to taste.
- Simmer:
- Continue to simmer the curry
for another 5 minutes to let the flavors meld together.
- Serve:
