Aloo paratha is a popular Indian flatbread that is stuffed with spiced mashed potatoes. Here's a recipe to make it at home:
Ingredients:
- 2 cups whole wheat flour
- 1/2 tsp salt
- 3/4 cup water
- 3-4 medium-sized potatoes
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 tsp garam masala powder
- Salt to taste
- 1 tbsp chopped coriander leaves
- 2 tbsp oil or ghee for cooking
Instructions:
In a large mixing bowl, combine the flour and salt. Slowly add water and knead the dough for 5-7 minutes until it is smooth and elastic. Cover with a damp cloth and set aside for 30 minutes.
Boil the potatoes in a pot of water until they are tender. Drain the water and let the potatoes cool. Once cool, peel and mash them in a mixing bowl.
Add cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala powder, salt, and chopped coriander leaves to the mashed potatoes. Mix well until all the spices are evenly distributed.
Divide the dough into equal-sized balls and roll them into 3-inch circles. Place a spoonful of the potato filling in the center of each circle.
Fold the dough over the filling and seal the edges by pinching them together. Flatten the stuffed dough ball and dust it with flour. Roll out gently into a 6-inch circle, making sure the filling does not come out.
Heat a tawa or griddle over medium-high heat. Place the rolled-out paratha on the tawa and cook for 1-2 minutes on each side. Apply oil or ghee on both sides and cook until the paratha turns golden brown.
Serve hot with your favorite accompaniment like curd, pickle, or chutney.
