Chhole Bhature is a popular North Indian dish that consists of spiced chickpeas (chhole) and deep-fried bread (bhature). Here's a recipe for making Chhole Bhature at home:
For Chhole:
Ingredients:
- 2 cups of chickpeas (soaked overnight)
- 1 large onion (finely chopped)
- 2 tomatoes (finely chopped)
- 2 green chilies (finely chopped)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil
Instructions:
- Drain the water from the soaked chickpeas and rinse them with fresh water.
- In a pressure cooker, add the chickpeas with 4 cups of water and 1 teaspoon of salt. Cook until chickpeas are soft and tender.
- In a pan, heat oil and add cumin seeds. Let them splutter.
- Add chopped onions, ginger-garlic paste, and green chilies. Sauté until the onions turn translucent.
- Add chopped tomatoes and cook until they turn mushy.
- Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.
- Add the cooked chickpeas along with the water to the pan. Mix well and bring it to a boil.
- Let the mixture simmer for 10-15 minutes on low flame until the gravy thickens.
- Garnish with chopped coriander leaves.
For Bhature:
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup semolina (suji)
- 1/2 cup yogurt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- Salt to taste
- Oil for frying
Instructions:
- In a bowl, add all-purpose flour, semolina, baking powder, baking soda, sugar, and salt. Mix well.
- Add yogurt and knead into a smooth dough. Add water if required.
- Cover the dough and keep it aside for 2 hours.
- Divide the dough into small balls and roll them into flat circles.
- Heat oil in a deep frying pan.
- Gently slide the rolled bhature into the hot oil and fry until they puff up and turn golden brown.
- Remove from the oil and place on a paper towel to absorb excess oil.
Serve hot Chhole with Bhature and enjoy your delicious meal!
