CHHOLE BHATURE RECIPES

 



Chhole Bhature is a popular North Indian dish that consists of spiced chickpeas (chhole) and deep-fried bread (bhature). Here's a recipe for making Chhole Bhature at home:

For Chhole:

Ingredients:

  • 2 cups of chickpeas (soaked overnight)
  • 1 large onion (finely chopped)
  • 2 tomatoes (finely chopped)
  • 2 green chilies (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons oil

Instructions:

  1. Drain the water from the soaked chickpeas and rinse them with fresh water.
  2. In a pressure cooker, add the chickpeas with 4 cups of water and 1 teaspoon of salt. Cook until chickpeas are soft and tender.
  3. In a pan, heat oil and add cumin seeds. Let them splutter.
  4. Add chopped onions, ginger-garlic paste, and green chilies. Sauté until the onions turn translucent.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add the cooked chickpeas along with the water to the pan. Mix well and bring it to a boil.
  8. Let the mixture simmer for 10-15 minutes on low flame until the gravy thickens.
  9. Garnish with chopped coriander leaves.

For Bhature:

Ingredients:

  • 2 cups all-purpose flour (maida)
  • 1/2 cup semolina (suji)
  • 1/2 cup yogurt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar
  • Salt to taste
  • Oil for frying

Instructions:

  1. In a bowl, add all-purpose flour, semolina, baking powder, baking soda, sugar, and salt. Mix well.
  2. Add yogurt and knead into a smooth dough. Add water if required.
  3. Cover the dough and keep it aside for 2 hours.
  4. Divide the dough into small balls and roll them into flat circles.
  5. Heat oil in a deep frying pan.
  6. Gently slide the rolled bhature into the hot oil and fry until they puff up and turn golden brown.
  7. Remove from the oil and place on a paper towel to absorb excess oil.

Serve hot Chhole with Bhature and enjoy your delicious meal!
