Sure, here's a recipe for Pav Bhaji:
Ingredients:
- 4 medium sized potatoes, boiled and mashed
- 2 cups of mixed vegetables (cauliflower, carrots, green peas), boiled and mashed
- 1 large onion, finely chopped
- 2 medium sized tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 tablespoon pav bhaji masala
- 1/2 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- Salt, to taste
- 2 tablespoons butter
- Fresh coriander leaves, finely chopped
- Pav (bread buns)
- Lemon wedges
Instructions:
- Heat butter in a large pan and add the chopped onions. Sauté until the onions turn translucent.
- Add the ginger-garlic paste and sauté for a minute.
- Add the chopped tomatoes and cook until they turn soft.
- Add the pav bhaji masala, red chilli powder, turmeric powder and salt. Mix well and cook for a few minutes.
- Add the boiled and mashed vegetables, mashed potatoes and a little water. Mix well and cook for 10-15 minutes on low heat, stirring occasionally.
- Mash the vegetables using a masher until it reaches the desired consistency.
- Add more butter if desired and mix well.
- Garnish with fresh coriander leaves and serve hot with pav buns and lemon wedges.
To prepare the Pav:
- Slice the pav buns horizontally into two parts.
- Heat a little butter on a griddle and toast the pav buns on both sides until they turn light brown.
- Serve hot with the prepared bhaji.
