Pyaaz Ki Kachori is a popular snack from the Indian state of Rajasthan. It is a crisp and flaky pastry filled with a spicy onion mixture. Here is a simple recipe for Pyaaz Ki Kachori:
Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1 tsp ghee
- 1/4 tsp salt
- Lukewarm water, as needed
For the filling:
- 2 large onions, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp mango powder (amchur)
- Salt, to taste
- 2 tbsp vegetable oil
- 1 tsp ghee
Vegetable oil, for deep frying
Instructions:
To make the dough, mix together flour, ghee, salt, and enough lukewarm water to form a soft and pliable dough. Knead for 5-7 minutes and set aside, covered with a damp cloth.
In a separate pan, heat oil and ghee over medium heat. Add cumin seeds and allow them to crackle.
Add the chopped onions and sauté until soft and translucent.
Add coriander powder, red chili powder, mango powder, and salt. Cook for 2-3 minutes and remove from heat.
Divide the dough into equal portions and shape into round balls. Flatten each ball and place a portion of the onion mixture in the center. Pinch the edges of the dough to seal the filling inside.
In a deep pan, heat vegetable oil over medium heat. Gently slide the kachoris into the hot oil and deep fry until golden brown and crisp.
Drain the kachoris on a paper towel to remove any excess oil. Serve hot with a cup of tea or coffee.
